Vegetable oils have always been considered due to their wide variety of uses in daily life. As a result, the authenticity of this group of oils is important. Food authentication based on nonlinear optical characteristics is now considered as a new approach of determining food authenticity. In this study, as a first step, the nonlinear optical properties of walnut, rosemary, and corn vegetable oils are studied in the thermal regime using the Z-scan method and CW laser at 532 nm. The sample's nonlinear refractive index values are measured to be in the range of 10-8 cm2/W.
